Ingredients:

  • 1 1/2 c. all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. Chinese 5 Spice
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 1/2 mashed brown bananas, 4 medium bananas
  • 1/4 c. unsalted butter, melted
  • 1/4 c. coconut oil, melted
  • 3/4 c. packed brown sugar
  • 1 large egg, room temperature
  • 1 tsp. Vanilla extract, we use Annie's Vanilla Extracts from our shop
  • Divine Sugars Cinnamon Sugar, optional topping, from our shop

Directions:

Preheat oven to 350 degrees F.  Grease a 9"x5" loaf pan with nonstick cooking spray.

In a medium bowlcombine flour, baking soda, salt, cinnamon, and Chinese 5 spice. Whisk then set aside.

In a large mixing bowl, mash bananas before adding butter and oil.  Mix with beaters until incorporated.  Stir in brown sugar, egg, and vanilla.

Stir dry ingredients into wet ingredients until combined.  Do not overmix, otherwise bread comes out heavy and flat.  Pour batter into loaf pan.  Sprinkle with Divine Sugars Cinnamon Sugar for a crunchy topping.  Bake for 55-65 minutes or until toothpick inserted into the center comes out clean.

Remove from oven and cool in pan for ten minutes.  Run a knife around edges to loosen from pan then carefully flip over and remove from pan.  Allow bread to continue cooling on wire rack.
