Ingredients:
- 2 1/2 c. all purpose flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2 large eggs, room temperature
- 1 c. cane sugar
- 1/3 c. coconut oil, melted
- 2/3 c. unsweetened applesauce
- 3/4 c. whole milk, warmed
- 1 1/2 tsp vanilla extract, we use our Annie's Vanilla Extracts
- 3/4 c. brown sugar, packed
- 1 1/2 c. diced apple, about 2 small to medium apples, preferably Gala, Honeycrisp, Pink Lady, or Granny Smith
Chai Mixture:
- 3 tsp. ginger
- 2 tsp. cinnamon
- 1 1/2 tsp. cardamom
- 1 tsp. cloves
- 1 tsp. nutmeg
- 1/4 tsp. black pepper
Directions:
Preheat oven to 350 degrees F. Spray a 9"x5" loaf pan or 3 mini loaf pans with nonstick baking spray.
Mix together Chai Mixture and set aside. In a medium bowl mix the flour, baking powder, salt, and 1 1/2 tsp. of the chai mixture together with a whisk. Set aside.
In a separate large mixing bowl, beat eggs and cane sugar together for approximately 2 minutes. Add in the oil, applesauce, milk, and vanilla. Mix until well blended. Add in dry ingredients and stir until just combined. Do not overmix! Bread will become heavy.
Add brown sugar to remaining chai mixture and combine well. Add diced apples to this mixture and toss to coat.
Pour half the batter into loaf pan. Top with chai apple mixture. Add remaining batter over the top and spread evenly.
Bake for 60-70 minutes. If using mini loaf pans, bake for 40 minutes or until a toothpick inserted comes out clean. Remove from oven and cool.
This bread is delicious served with either maple frosting, butter and honey, or a hot cup of coffee. Store in airtight wrapping at room temperature for 5 days. This is also good made into a bread pudding.
