Cocoa Oatmeal Delights with Reese's Peanut Butter Chips

Indulge in the delightful combination of rich cocoa and hearty oatmeal with our Cocoa Oatmeal Delights. Packed with irresistible Reese's peanut butter chips, crunchy flax seeds, and wholesome almonds, these cookies offer a perfect balance of flavors and textures. Each bite is a harmonious blend of chocolatey goodness, nutty notes, and a hint of peanut butter.  

If you don't have the flax or almonds, feel free to substitute any other nuts or seeds that you have on hand.  Raid your pantry and see what all possibilities and combinations you can come up with.

Ingredients:

2 c. all-purpose flour

1 1/2 c. old-fashioned oats

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

1 tsp salt

1/3 c cocoa

3/4 c white sugar

3/4 c brown sugar, packed

1 tsp vanilla

1 c unsalted butter, softened

2 eggs

1/3 c flax seeds

1/2 c sliced almonds

1/2 bag of chocolate chips

1/2 bag of Reese's Peanut Butter Chips

Directions:

Preheat oven to 350 degrees.  Spray two separate cookie sheets with cooking spray.

In a large bowl add mix together flour, oatmeal, baking soda, powder, salt, cinnamon, and cocoa.  In a separate large, mixing bowl, combine butter and sugars.  Beat with a mixer until creamed.  Add one egg at a time, then follow up with vanilla, mixing between each addition.  Slowly add in the flour mixture in thirds.  This allows the mixture to combine easier and creates less of a "flour cloud" all over your counter.  Stir in almonds, flax seeds, and chocolate and peanut butter chips lastly.  

Drop cookie dough by spoonfuls onto the greased cookie sheet.  Bake in oven for 10 minutes.  While the first pan is baking you can prepare the next batch of cookies on the second cookie sheet.  

Makes approximately 4 dozen cookies depending on the size.
